From a single plot. After a manual harvest in September, the grapes are vinified in red in stainless steel tanks, with fermentation in contact with the skins. A first ageing phase in French oak barriques imparts structure and aromatic depth; a second stage in terracotta amphorae of 350 and 750 litres preserves varietal purity. After gentle decanting and filtration, the wine rests in bottle.
Bright ruby red with evolving garnet reflections. Fine, precise notes of red fruits, cherry, raspberry, red currant, followed by delicate floral nuances and hints of sweet spices. A silky texture, with subtle, well-integrated tannins, lively freshness and elegant persistence. The balance between delicacy and depth gives way to a dynamic, harmonious sip that fully respects the varietal character.
White meats, roasted poultry, rabbit, traditional Alpine cuisine. It pairs beautifully with mushroom risottos, pumpkin tortelli and even crusted fish. Excellent with semi-aged, soft cheeses.
